S'mores Crispy Rice Treats

S’mores and crispy rice treats are two simple desserts I truly enjoy. I consider both of the treats semi-homemade since I pretty much combine pre-existing ingredients with some prepared ingredients. While shopping for groceries today, I had a craving for both s’mores and Rice Krispies treats. Typically, I would purchase a package of the treats, but today, I wanted to make my own version of the treats combined with s’mores. I grew up eating a lot of variations of Rice Krispies treats. My brothers and I even tried making them a couple times when we were kids. They were the perfect treats to make for Halloween and can be cut into any size we wanted. I’ve enjoyed the treats both when I was a child and as an adult. Early on, when I first started working, I would buy a box of Rice Krispies treats and pack one for lunch each day throughout the week. It made for the best sweet treat after a savory lunch. Yes, I realize how simple they are to make, but it was always easier to pick up a box than to make my own. Today, I decided to purchase the ingredients to make a hybrid treat instead of buying a box of Rice Krispies treats. These hybrid treats are the perfect end to a long work week.

S’mores Crispy Rice Treats

· ¼ cup (4 tablespoons) unsalted butter, plus additional for greasing glass pan
· 10-ounce package mini marshmallows
· 9 ounces of Rice Krispies cereal (about ¾ of a standard sized bag)
· ½-1 cup Teddy Grahams
· ½-¾ cup semisweet chocolate chips

Directions:

1) Grease a glass pan with butter. Set aside.

2) Heat a large pot on medium heat. Melt the unsalted butter in the pot. Add the package of mini marshmallows. Stir the contents of the pot until the marshmallows are almost melted through, about 2-3 minutes. Turn off the heat. Fold in the crispy rice cereal until combined.  

3) Start layering the glass pan with about a third of the mixture from the pot followed by a third of the graham crackers and chocolate chips. Continue layering with the remaining mixture from the pot, graham crackers, and chocolate chips.

4) Let the mixture cool before serving.

Takeaways: The crispy rice treats can be customized with any candy, cookie, or topping of your choice. Try mixing and matching to create other mashups such as cookies and cream and confetti. The possibilities are endless.
