My mom made the absolute best simple, sweet, and sticky spareribs. For every major holiday celebration with family, she would make spareribs using her signature sauce. Everyone goes straight for her spareribs without hesitation. She uses the same all-purpose sauce to stir fry or bake pretty much all meats. She has used this sauce for chicken wings, beef cubes, and pork chops. These ribs are so good, I always end up eating one too many during the holidays. Earlier this week, I had a sudden craving for spareribs. I picked up a rack of spareribs on Friday night, called my mom to confirm the instructions for making her version of spareribs, and then started on the preparation. My mom’s instructions always sound like a little bit of this, dash of that, scoop of this, and so on. Since I’ve watched my mom make ribs so many times, I can pretty much remember most of the steps, but I wanted to call my mom to confirm. I followed my mom’s method of rubbing the ribs in a cornstarch rub, rinsing off the cornstarch rub, and marinating the spareribs in sugar, soy sauce, and oyster sauce the evening before. The next day, I preheated the oven to 375°F, brushed on some additional sauce, and then baked up the delicious ribs in the oven. In the final stage of baking, I brushed on some barbecue sauce, and then let the ribs finish browning in the oven.

February has been a pretty festive month so far. Kevin and I celebrated Chinese New Year just last week and now we are celebrating Valentine’s Day. Today, I wanted to share a first date story and one more sweet treat for Valentine’s Day. I’ve been sharing Valentine’s Day celebration recipes all week, but this one takes the cake. The inspiration for my chocolate cupcakes with raspberry frosting came about as I reminisced about one of my first dates with Kevin many years ago. Back when I was still a student at Michigan, Kevin brought me to The Melting Pot in Ann Arbor to celebrate one of our very first Valentine’s Day holidays as a couple. He had made reservations ahead of time, met up with me after one of my classes, and walked with me down to Main Street to surprise me with a romantic dinner. We ordered a cheese fondue with assorted meats, and a chocolate fondue with assorted fruits. We spent the entire night chatting and connecting over good food. While we enjoyed the cheese fondue, we both loved the chocolate fondue with fresh fruit. Mostly, I loved the combination of chocolate with fruit. This combination inspired me to make chocolate cupcakes with raspberry frosting mainly because chocolate pairs very well with raspberries.

I typically crave pizza at least once a week. Over the weekend, Kevin and I celebrated Valentine’s Day early with a simple dinner. My hearty pepperoni and arugula cast iron pizza was the star of our dinner. I cut up pieces of pepperoni into little heart shapes and added them to my pizza. Pizza is one of my favorite foods in the world. When I lived in New York, I ate pizza at least once each week. I didn’t start making my own pizza from scratch until I moved to the Midwest. When I make my pizza, I usually bake my pizza in the oven on top of a pizza stone or directly on a sheet pan. This time around, I decided to make pizza directly in a cast iron skillet. I preheated the oven with the cast iron skillet in the oven. When the oven reached 500°F, I carefully removed the cast iron skillet from the oven, drizzled on some olive oil, pressed the pizza dough into the skillet, topped the pizza with my favorite ingredients, and baked the pizza in the oven until it turned golden brown. The best part about a cast iron pizza is the dough develops a nice browning at the bottom.

The snow has started falling again in Ohio. Earlier this week, we actually had nice spring-like weather. The temperature dropped again during the weekend. Today, the snow and slush began to pick up in the afternoon. I went for my usual Sunday morning run. Other than going to the gym in the morning, I stayed inside for most of today to avoid the snow. To continue on the early Valentine’s Day celebration, I’m sharing my recipe for berry chicken salad with lemon Dijon dressing. I made this salad as part of an early Valentine’s Day celebration dinner with Kevin yesterday. We had a simple dinner of homemade garlic knots with marinara sauce, hearty pepperoni cast iron pizza, and a berry chicken salad with lemon Dijon dressing. Whenever I have a carbohydrate heavy meal, I like to serve the meal with a side salad. I like the balance of a fresh, light salad with the hearty pizza and garlic knots. In the spirit of Valentine’s Day, I wanted my salad to have redness. Thus, in addition to blueberries and blackberries, I also added some strawberries and raspberries. To round out the rest of my salad, I grilled some chicken, crumbled some blue cheese, and served all of the fresh ingredients over a bed of spinach, lettuce, and arugula blend.

Valentine’s Day is around the corner. February is an exciting month. It’s the month of celebrating love for your partner, family, and friends. Chinese New Year also landed in the month of February this year. Many years ago, when Kevin and I first started dating, we celebrated Valentine’s Day at Cottage Inn in Ann Arbor. We ordered a large pizza to share, a side salad, and garlicky bread sticks. Both of us had such a good time chatting over a delicious, simple meal. We wanted to recreate the experience with a simple Valentine’s Day dinner this year. Since Valentine’s Day is on a weekday this year, Kevin and I decided to celebrate the holiday this weekend. We celebrated with a simple meal of garlic knots with marinara sauce, a fresh salad, and a cast iron pizza. For dessert, we had vegan iced coffee with bits of chocolate chips blended into the drink. You can make a version of my iced coffee here. I am a huge fan of garlic knots and typically make shortcut garlic knots with marinara sauce when I’m short on time. For our Valentine’s Day celebration, I wanted to spend a little extra time by preparing pizza dough the evening before and using the pizza dough to make garlic knots from scratch.

Two weeks ago, I made a scrumptious orange and blueberry loaf cake. The loaf cake was perfect for Sunday brunch and the leftovers worked even better cut into slices and served for breakfast throughout the week. Last weekend, I made another version of my loaf cake using some leftover blueberries, fresh raspberries, and the zest of a whole lemon. The combination of berries and citrus works exceptionally well in desserts. I love using both lemon zest and orange zest in my desserts. If you’ve tried some of my desserts, you can see I like to add in orange zest or lemon zest whenever possible. Lemon zest adds a nice freshness and brightness to both sweet and savory dishes. I’ve added lemon zest to cakes, pasta, and even pizza. If I am unsure of what I want for brunch on Sundays, a loaf cake always works as a great addition to brunch. During brunch this past Sunday, I was craving a fresh, healthy breakfast after my morning run. I had a ripe avocado sitting on my kitchen counter and ended up making avocado toast topped with a fried egg, fresh salsa, and golden raisins. Of course, just avocado toast was not enough for Kevin and I, so I made a mixed berry and lemon loaf cake to serve alongside the avocado toast.

Today is Chinese New Year. There are a few traditions (more like superstitions) for Chinese New Year my family instilled in me since I was a child. Over the years, I often forget about the actions I should avoid on this holiday and end up taking one or more of those actions. A couple years ago, I challenged myself not to get to three strikes. Well, today, I got to two strikes. First, I totally forgot not to wash my hair as washing hair is associated with washing away luck and good fortune. Kevin did remind me not to wash my hair, but out of my autopilot habit, I ended up washing my hair when I got home. That was the first strike. For dinner, I was craving an apple and cherry tomatoes for my salad and ended up cutting a whole apple and halving some cherry tomatoes. Whoops! I should avoid cutting anything on New Year’s day. That was my second strike. I vowed not to get a third strike today. So far, so good.

Happy Chinese New Year eve! The evening before Chinese New Year is often my favorite part of the holiday festivities. The evening before is when families come together from near and afar to have a large family dinner. I try my best to return home for Chinese New Year at least once every two years. Last year, Kevin and I both traveled back to Brooklyn to celebrate with my family. This year, it was only Kevin and I celebrating together. I don’t consider myself a very superstitious person, but my parents definitely are. They would instruct us not to sweep, eat congee, or wash our clothes on Chinese New Year day. In the days leading up to Chinese New Year, my dad would buy some nice floral blooms to decorate the home. My mom would thoroughly clean the home from top to bottom. My brothers and I would write down what we want for the family togetherness dinner on the night before Chinese New Year. On the morning of, we start off with a vegetarian meal, usually some form of vegetable and noodles.

It’s almost Chinese New Year. 2019 is the year of the pig. Growing up in New York, I love going to Chinatown in Manhattan during Chinese New Year. The streets are filled with red and gold decorations, firecrackers, and lion dancers. The restaurants are packed with families and friends connecting over good food. I usually try to avoid crowds whenever possible, but Chinese New Year in Chinatown is one of those days when I make an exception. My family always made a togetherness dinner for the entire family the evening before Chinese New Year. My immediate family would gather over the dinner table to share in eating longevity noodles, prosperous steamed fish, and some sweet soup dumplings. Besides the absolutely delightful food, we would eat other lucky treats and collect red envelopes from our close relatives. All of those traditions and memories are forever etched in my mind.

It has been a while since I had potatoes. I usually have potatoes at least once a week, but I haven’t picked up potatoes in over two months. I haven’t even picked up my favorite frozen fries and tater tots from the supermarket in weeks. I can’t believe I haven’t had potatoes in nearly two months considering potatoes are an absolute weakness of mine. My drought from eating potatoes changed this week. After my work out earlier this week, I was craving some starchy potato goodness. I ended up washing a few russet potatoes, cutting them up into wedges, drizzling on some olive oil, generously seasoning both sides of the wedges, and then roasting them in the oven. As the potatoes were roasting in the oven, the most wonderful smell filled my kitchen.
