Today was my first day back to school. Last year, I decided to go back to school to take baking classes so I could improve my baking skills. I’ve been out of school for quite a few years now, so it felt a bit strange to go back to school. The first class was a standard intro class. The professor walked us through the syllabus and the importance of learning the science behind baking. Since I knew today would be a long day, I packed one of my high protein tofu rice bowls.

Cold winter days call for warm delicious meals. Over the weekend, I whipped up a very quick pork cubes and vegetable fried rice dish. Pork cubes is a spin on my mom’s signature pork chops. Her favorite all-purpose sauce, which she uses to marinade all types of meats and seafood is made up of only three ingredients – oyster sauce, soy sauce, and sugar. That’s all. The meat sits in the all-purpose sauce for at least 30 minutes. Then, you take the meat with the sauce and sear it in a hot skillet for a couple minutes until the meat is nicely browned and cooked through.

Today, I baked up a batch of the most wonderful cookies. These cookies aren’t just regular chocolate chip cookies. The cookies are infused with the zest of an entire Cara Cara orange and turned out refreshingly chocolatey. To be honest, I love any baked treat infused with zest from citrus. Other than orange zest, I equally love infusing lemon zest into baked goods. Winter Storm Gia has continued to pile on tons of snow today. When I woke up in the morning, I peeked out the window to check the road conditions.

Fried chicken cutlets and crispy pork chops are two of Kevin’s favorite dishes. In fact, anything dipped in batter, and fried in hot oil is beloved by Kevin. Over the weekend, I woke up craving brunch from Taste of Belgium. When I looked outside the window, I saw buildings, cars, and ground covered in a blanket of snow. Winter Storm Gia had made its way to Ohio. Throughout the day, it has been snowing on and off. Whenever it snows outside, I like to stay bundled up inside.

I have been obsessed with coffee and coffee infused treats lately. Earlier this week, I made some chocolate and coffee scones, and throughout the week, I have been snacking on chocolate bites with brewed coffee in the center of the chocolates. I recently discovered these chocolate treats when Kevin brought home a jar of chocolates. The jar of chocolates was given to him from one of his colleagues as a holiday gift. Inside the jar was a chocolate candy I had never seen or tasted before.

I took a break from going to the gym during the month of December. I went back to the gym for the first time in almost three weeks and definitely needed time to adjust back to my running routine on the treadmill. This past Sunday, it took all the might in me to head back to the gym. Kevin was much better and headed back to the gym almost immediately after our trip.

Today marks the first official full week of work for me since the holidays. I recently changed my work schedule and will need to wake up earlier to go to work. While I don’t typically drink coffee too often, I did pick up some instant coffee to bring with me to work in case I needed it. Over the weekend, I was craving a chocolate treat and wanted to incorporate some of the instant coffee I had at home into the treat.

One of those treats is black and white cookies. During my trip back to Brooklyn, I bought a box of black and white cookies to share with my family. These were the same black and white cookies I served at my wedding in July of 2018.

Happy New Year! On my trip back from New York to Ohio earlier this week, I had the most amazing green smoothie at LaGuardia Airport. Kevin and I were hungry as we were waiting for our return flight back to Ohio and decided to order breakfast at one of the restaurants. While I was visiting family in Brooklyn this week, I woke up one morning and decided to bake some rainbow cereal cupcakes using some leftover Fruity Pebbles cereal sitting on my parents’ dining room table. The idea to combine cereal into a dessert came about after I visited Milk Bar for some ice cream and crunchy cereal topping with friends earlier in the week and ate a rainbow bagel from The Original Bagel Store after my older brother brought half a dozen over later during the week. Eating both of these items made me want to incorporate cereal into some sort of dessert.
